Peach Pie

I found this recipe on my friend Aimee R's blog last fall. I've been waiting for peach season all year so I can make it. Was it worth the wait? Definitely. So, so good!

Fresh Peach Pie

Blind bake your pie crust and let it cool.

5 cups peaches
1 Tbs lemon juice
1/4 cup sugar

Toss together and let it sit for one hour. Drain juice into a measuring cup and add enough water to make 1 cup total liquid.

1/2 cup sugar
3 Tbs cornstarch
1 cup peach juice from above

Boil to thicken. Add:

1/8 tsp salt
1/8 tsp vanilla
2 Tbs butter

Pour over peaches and mix gently. Pour into baked pie crust. Top with whipped cream and serve.

Hey Andrea! I'm glad you found me! I tried to get on your family blog and (as you know) it's on private so I hope you don't mind me commenting here.

My cousin, Kate, recommended Alfie's books to me years ago. She writes a book all about parenting based on the Unconditional Parenting philosophy. You might enjoy it.

I'd love an invite to your blog, if you have any invites left. I'm glad we'll be able to stay in better touch!

Love this blog. I am always looking for more treats!!! I remember at my bridal shower your Mom gave me all the stuff to make a pie and told me that you make the best pies. I was in shock that you knew how to make a pie. I guess now that I am 32 I should give it a try. LOL
