Lemon Drop Cookies























I got this delicious recipe from my friend Trisha P. They are a favorite with everyone at my house!

Lemon Drop Candy Cookies
2 cups sugar
1 1/2 cups butter-flavor Crisco shortening
3 large eggs
2 tsp vanilla
1 tsp lemon extract
4 cups flour
1 1/2 tsp baking soda
1 1/2 tsp baking powder
1 tsp salt
zest of one lemon, finely chopped (a microplane makes it so easy)
6 oz lemon drop candies, crushed but not powdered

For glaze:
juice from lemon above
1 cup powdered sugar

Preheat oven to 350 degrees F. In a bowl cream sugar and shortening for 2 minutes. Add eggs one at a time. Add vanilla and lemon extract. Stir in dry ingredients, lemon zest and crushed lemon drops. Scoop into 1-inch balls and flatten slightly (I use the bottom of a cup). Bake on parchment paper or Silpat-lined baking sheets for 10-12 minutes. Let cool on pan for 1-2 minutes then transfer to a wire rack.

Make glaze by mixing powdered sugar with juice from the lemon. Brush or spoon it lightly on the cookies and let them cool completely.
