Blackberry Pork Tenderloin

This is delicious served with mashed potatoes!  I love pork tenderloins because they cook quickly and they are always good!  I got this recipe from my friend Jen S.

Serves 6-8

pork tenderloin (2-3 lbs)
Kosher salt
freshly ground pepper
2 Tbs olive oil
1/2 cup blackberry preserves
1/2 cup raspberry vinegar
1 chicken bouillon cube

To prepare pork tenderloin place it in an oven safe baking dish and sprinkle salt and pepper on top of the meat.  Drizzle olive oil over seasonings and bake at 325 for 30-35 minutes or until the center of the meat is cooked all the way through (160 degrees F).  To make the sauce, mix preserves, vinegar and bouillon cube in a sauce pan and allow it to simmer for 10 minutes.  During the last 10 minutes of baking, baste the tenderloin with blackberry sauce.
