Mint Chocolate Spray Ice Cream

We have a cool little Cuisinart ice cream maker that my parents gave us years ago - it's just the right size (if it made any more than it does we would be in trouble). You can have really delicious homemade ice cream in about half an hour. You don't need ice or salt - you just freeze the bowl itself. Pretty slick. I made mint chocolate spray ice cream this afternoon and it was sooooo good! Try this recipe if you have one of these machines (you could probably double it and use a regular size ice cream maker too - just check to see how much it holds). It only has a few ingredients and it's so easy.

Mint Chocolate Spray Ice Cream
(This is my own twist on the basic vanilla recipe that comes with the machine)
2 cups heavy cream, chilled
1 cup whole milk, chilled
3/4 cup sugar
1/2 tsp mint extract
1/2 cup chocolate chips
green food coloring (optional)

Place ingredients in a medium mixing bowl and combine until well blended. Turn the machine on and pour into freezer bowl. Let it mix until it thickens, about 20-25 minutes. While it freezes pulse the chocolate chips in a food processor so they are like small shavings. Add the chocolate shavings about 5 minutes before it's finished. Serve immediately or transer to a freezer container for about 2 hours until it hardens up a little.
