I love this recipe from my aunt Kimberly O. They are so delicious!
1 cup all-purpose flour
1/2 cup oat bran
1 tsp baking powder
1 tsp cinnamon
1/4 tsp salt
2 eggs
3/4 cup dark brown sugar
1/4 cup oil
1 tsp vanilla
3/4 cup diced, unpeeled tart apple
3/4 cup fresh whole cranberries
1/2 cup chopped walnuts (I leave this out)
Mix flour, oat bran, baking powder, cinnamon and salt in a large bowl and set aside. In another bowl break eggs, add sugar and whisk until smooth. Whisk in oil and vanilla. Stir in apples, cranberries and nuts. Pour over dry ingredients and fold in just until dry ingredients are moistened. Bake at 350F until firm to the touch (20-25 minutes). Cool on a rack. Store for 1-2 days before reheating and serving. Do not freeze.
Note: You can also use whole frozen cranberries (don't thaw them - just use them frozen). I usually use light brown sugar instead of dark.
